Why We Love It

Let's talk snacks for a minute, shall we? I just can't get enough of anything salty and crunchy these days. While I do have a sweet tooth, I'm definitely more a savory gal for sure. That shift happened for some reason after I had kids. Maybe I had too much ice cream (if there is such a thing) during my last pregnancy.

Whatever the reason, my pantry went from being filled with a lot of sweets to now being filled with a lot of salty treats. Pretzels and nuts are at the top of that list. I love them all from the simple to the flavored. So, when I'm not indulging in Garlic Ranch Pretzels or rods or twists, I'm eating cashews, pumpkin seeds and other great savory snacks.

When my sweet tooth starts to feel a little neglected though, and I'm in the mood for an extra special crunch, I go to my spice rack, grab my cinnamon and sugar, and make these delicious Candied Mixed Nuts. With peanuts, cashews and almonds, this recipe has my top three nut faves and is really the best of both worlds for me. I get to have my salty with a little bit of sweet. The added bonus is that the house smells amazing for the rest of the day after these bake in the oven!

But it's all about moderation, right? Ahem, yes it is. So be sure to balance all this noshing out with a salad or two, perhaps by making Mediterranean Bean Salad or Asparagus Tomato Salad!

Candied Mixed Nuts Ingredients

  • 6 ounces whole cashews, lightly salted
  • 6 ounces whole almonds, lightly salted
  • 4 ounces peanuts, unsalted
  • 1 teaspoon sea salt
  • 1 & 1/2 teaspoons cinnamon
  • 1 cup white sugar
  • 1 egg white
  • 1 teaspoon water

How to make Candied Mixed Nuts

You'll want to gather the following equipment:

  • large rimmed baking/jelly roll pan (lined with lightly greased foil for easier cleanup)
  • large mixing bowl
  • small mixing bowl
  • mixing spoon
  • measuring cups
  • measuring spoons
  • whisk or hand mixer
  • spatula

Getting Started

Line your rimmed baking pan with lightly greased foil.

Preheat oven to 250° F.

Place the nuts in your large mixing bowl. Add the salt, cinnamon and sugar; lightly toss with a stirring spoon.

In a separate, small bowl, beat the egg white and water until stiff.

Gently fold the egg white mixture into the large bowl. Mix all ingredients until well blended.

Place the nuts on your prepared, rimmed baking sheet. Break up clusters of nuts with a spoon or spatula.

Bake in a preheated 250° oven for 1 hour. Every 20 minutes, stir the nuts.

Let stand for 5 minutes; then remove nuts from the pan.

Note

I've found that a combination of lightly salted and unsalted nuts works well in this recipe. I would avoid using full salted nuts. There is salt in the cinnamon/sugar mixture to cut the sweetness of the coating. Keep that in mind when you choose your nuts for this recipe!

Any nut (unsalted or lightly salted) will work well in this recipe. When my MIL makes these for the holidays, she uses pecans and sometimes walnuts!
