That shift happened for some reason after I had kids. Maybe I had too much ice cream (if there is such a thing) during my last pregnancy. I love them all from the simple to the flavored. So, when I'm not indulging in Garlic Ranch Pretzels or rods or twists, I'm eating cashews, pumpkin seeds and other great savory snacks.
When my sweet tooth starts to feel a little neglected though, and I'm in the mood for an extra special crunch, I go to my spice rack, grab my cinnamon and sugar, and make these delicious Candied Mixed Nuts. With peanuts, cashews and almonds, this recipe has my top three nut faves and is really the best of both worlds for me. I get to have my salty with a little bit of sweet. The added bonus is that the house smells amazing for the rest of the day after these bake in the oven!

You'll want to gather the following equipment:
Before starting...
Place the nuts in your large mixing bowl.
Add the salt, cinnamon and sugar; lightly toss with a stirring spoon.
In a separate, small bowl, beat the egg white and water until stiff.

Gently fold the egg white mixture into the large bowl. Mix all ingredients until well blended.

I've found that a combination of lightly salted and unsalted nuts works well in this recipe. I would avoid using full salted nuts. There is salt in the cinnamon/sugar mixture to cut the sweetness of the coating. Keep that in mind when you choose your nuts for this recipe!
Any nut (unsalted or lightly salted) will work well in this recipe. When my MIL makes these for the holidays, she uses pecans and sometimes walnuts!
