Peanut Butter Butterscotch Blondies Ingredients

  • 1/3 cup butter, softened
  • 1/2 cup smooth peanut butter (I use Jif)
  • 1/4 cup light brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch chips

How to make Peanut Butter Butterscotch Blondies

You'll want to gather the following equipment:

  • 8x8 pan
  • large mixing bowl
  • hand mixer
  • medium mixing bowl
  • mixing spoons
  • measuring cups
  • measuring spoons
  • scraping spatula
  • serving spatula

Before starting...

  • Preheat your oven to 350 degrees.
  • Soften the butter on your counter.

Add the softened butter to your large bowl. Then add the peanut butter. Use a hand mixer on low speed to blend. The mixture will be thick and will have a bit of a whipped consistency.

Next, add the brown and white sugars. Use the mixer on medium speed to blend well.

Add eggs, one at a time, beating on low speed after each addition. Then add the vanilla. Mix on low speed until just blended. Then set this bowl and the hand mixer aside.

In a medium mixing bowl, mix the flour, baking powder and salt. Then add this mixture to the large bowl. Stir with a spoon until just combined.

Stir in the butterscotch and chocolate chips. The mixture will be thick!

Spread this mixture into your prepared 8x8 pan. (You may choose to line your pan with parchment paper first for easier removal.)

Bake Peanut Butter Butterscotch Blondies in a 350 degree oven for 30-35 minutes.

Kitchen Ready Betty tip: Keep in mind that the longer Peanut Butter Butterscotch Blondies bake, the more cake-like they will be. We want them to be soft and chewy, but definitely not gooey (which would be a sign of them being undercooked). I would advise checking in on the blondies a few times around the 30 minute mark (both before and after that time). Use a toothpick inserted in the center as your guide to determine if they are gooey. If so, bake just a little longer and recheck!

Allow to cool for 10 minutes. Then loosen from the edges of the pan and cut into squares!

    Keep the container on your counter. Refrigerating blondies may make them too hard and stiff.
