I just can’t get enough of anything salty and crunchy these days–and pretzels and nuts are at the top of that list.

When I’m not indulging in Garlic Ranch Pretzels or Parmesan Herb Seasoned Pretzels, I’m noshing on cashews, pumpkin seeds and other great savory snacks.

But sometimes I get in the mood for a sweet and salty crunch. That’s when I go to my spice rack, grab my cinnamon and sugar, and make this super delicious Candied Mixed Nuts recipe. With peanuts, cashews and almonds, this easy snack has my top three nut faves (though any combination of nuts can be used–some popular alternatives are walnuts, pecans and pistachios).

The added bonus is that the house smells amazing (like a cinnamon-sugar wonderland kind of amazing) for the rest of the day after these bake in the oven!

  • whole cashews, almonds and peanuts (these are my preferred, but any nut or combination of nuts will do)

  • large rimmed baking/jelly roll pan (lined with lightly greased foil or parchment paper for easier cleanup)
  • large mixing bowl

Getting Started

Preheat oven to 250°

Line a rimmed baking pan with lightly greased foil or parchment paper.

Place the nuts in a large mixing bowl. Add the salt, cinnamon and sugar; lightly toss with a stirring spoon.

In a separate, small bowl, beat the egg white and water until stiff.

Kitchen Ready Betty tip: You may choose to do this step with a whisk or hand mixer.

Gently fold the egg white mixture into the large bowl. Mix all ingredients until well blended.

Place the nuts on your prepared, rimmed baking sheet. Break up clusters of nuts with a spoon or spatula.

Bake in a preheated 250° oven for 1 hour. Every 20 minutes, stir the nuts.

Let stand for 5 minutes; then remove nuts from the pan.

Storing Candied Mixed Nuts

Store in an airtight container at room temperature. Enjoy within 2-3 weeks.

How to Make Candied Mixed Nuts

  1. Before starting...

Note

I've found that a combination of lightly salted nuts works well in this recipe. I would avoid using full salted nuts. There is salt in the cinnamon/sugar mixture to cut the sweetness of the coating. Keep that in mind when you choose your nuts for this recipe!

Any nut will work well in this recipe. Feel free to mix it up and use your favorite(s). When my MIL makes these for the holidays, she uses pecans and walnuts!

Do I have to use sea salt?

You can use any finely grounded salt for this recipe.

Do you buy roasted or unroasted nuts for this?

Either is fine. The coating protects the nuts and we do bake these at a low heat. I encourage you to experiment with different kinds of nuts to find what you like best. I typically use unroasted, but they can sometimes be hard to find.

How are these different from glazed nuts?

Good question! These Candied Mixed Nuts have a bit of a crusty exterior in their coating. Glazed nuts are usually smoother/glossier and sometimes involve melting sugar and using a candy thermometer.
