With a parfait-like consistency, this no-bake Strawberries and Cream Pie is filled to its graham cracker edges with puréed berries, whipped heavy cream, cream cheese and sugar. There’s even a secret spice ingredient (which we’ll reveal in just a bit) that accentuates this tasty pie’s great flavors even further.

This strawberry and cream pie only has 8 basic ingredients, and is ridiculously simple to make. With its super smooth consistency, it really goes down quite easily–especially on a hot summer’s day. We take a shortcut right from the start by using a pre-made graham cracker crust (aren’t those great?). And, while some of the strawberries are sliced, the majority of them are puréed in a food processor or blender, along with the cream cheese. A hand mixer is used to turn the sugar and heavy cream into delicious, dreamy whip. This all gets mixed together and then sets in the fridge–no baking required!

SPICE REVEAL PARTY: It’s nutmeg! You read that right. Nutmeg adds just a little bit of complimentary flavor to this already amazingly, tasty dessert.

Here’s a fun fact: Nutmeg actually comes from the seed found in fruit that grows on nutmeg trees! A little aromatic, nutmeg enhances the sweet flavor of strawberries (among other fruits, like it’s popular pairing with pumpkin)–thus making it an excellent addition in so many pies.

Getting Started

Before you begin:

  • Soften cream cheese on counter (or microwave for 30 seconds)
  • Wash, hull and slice strawberries
  • Sift confectioner’s sugar

In a food processor or blender, combine the softened cream cheese, granulated sugar, vanilla and nutmeg. Mix until well blended.

Add 3/4 cup of the sliced strawberries. Blend until strawberries are puréed and mixture is smooth.

In a large mixing bowl, use a hand mixer to whip heavy cream with confectioner’s sugar until stiff peaks form.

Kitchen Ready Betty tip: The more you beat the cream, the more solidified the pie will be.

Spoon the puréed strawberry/cream cheese mixture into the large bowl. Carefully fold to blend with whip.

Fold in the remaining 1/4 cup of sliced strawberries.

Spoon mixture into graham cracker crust and gently spread to the edges.

Cover and refrigerate for 6 hours or even overnight. Garnish with additional berries if desired.

Note

Please only use fresh strawberries for this recipe. Frozen strawberries are too watery and will affect the consistency of the pie.

The stiffer you beat the whip, the firmer the pie will be.

I like to use Keebler's Ready-Made Graham Crust as a shortcut, but feel free to make your own. Just keep in mind that the standard 9-inch pie plate is bigger than a store-bought crust.

Can I add some other berries to this?

Oh, that sounds like fun! I would fold some blueberries or sliced blackberries into the filling as a surprise!

Do I have to sift the sugar? It's already powdered.

I wouldn't skip it. When you sift it, it incorporates better with the whipping cream.

This tastes great, but I'm not a fan of the consistency. What did I do wrong?

If your pie is super runny, we need to check on a few things. If you used fresh berries and heavy whipping cream as the recipe states, than this is most likely a result of how long you beat the cream with the confectioner's sugar. It is helpful to use a hand mixer on its highest setting until stiff peaks form. I like a parfait-like consistency, but if you want something more solid, beat the cream for longer.  Remember: the stiffer the cream, the firmer the pie. I'm glad you liked the taste, so I hope you give it another try!
