Ingredients
8ozfull fat cream cheesesoftened
¼cupgranulated sugar
½teaspoonvanilla extract
¼teaspoonground nutmeg
1cupfresh strawberry slicesdivided
1cupcold heavy whipping cream
¼cupconfectioner's sugar
1pre-madegraham cracker crustunbaked

Instructions
In a food processor or blender, combine the softened cream cheese, granulated sugar, vanilla and nutmeg. Mix until well blended.
Add ¾ cup of the sliced strawberries. Blend until strawberries are puréed and mixture is smooth. Transfer mixture to large mixing bowl.
In a medium mixing bowl, use a hand mixer with whisk attachment to whip heavy cream with confectioner's sugar until very stiff peaks form.
Spoon whip into large bowl. Carefully fold to blend with strawberry mixture.
Fold in the remaining ¼ cup of sliced strawberries.
Spoon mixture into graham cracker crust and gently spread to the edges.
Cover and refrigerate for a minimum of 6 hours, but best overnight. Garnish with additional berries and whip if desired.
Notes
Please only use fresh strawberries for this recipe. Frozen strawberries are too watery and will affect the consistency of the pie.
Make sure to pat your washed, fresh strawberries completely dry before slicing them. Any extra water left on the fruit can thin out the filling of your beautiful no-bake dessert.
For the absolute best, most sliceable consistency, this strawberry cream pie needs plenty of time to set up in the fridge. It requires a strict minimum of 6 hours to firm up properly, but letting it chill overnight is highly recommended.
