Peanut Clusters start out very similar in taste and texture to peanut butter fudge, but what sets them apart is the addition of instant oats and the way the confection sets.
Once mixed, these no-bake candies get dolloped onto parchment paper, and set in the fridge for a few hours. Then they're ready to enjoy!

Ingredients
  

  • 1 cup granulated sugar
  • ¼ cup butter
  • cup evaporated milk
  • cup smooth peanut butter
  • 1 cup quick oats
  • ½ cup cocktail peanuts I use sea salt

Instructions
 

  • Line baking sheet with parchment paper and set aside.
  • Combine sugar, butter and milk in small saucepan. Bring to a full boil, stirring occasionally. Boil for an ADDITIONAL 3 MINUTES ONLY, stirring frequently.
  • Immediately transfer mixture to mixing bowl. Stir in peanut butter until smooth.
  • Fold in oats and nuts.
  • Use a small cookie scoop (equivalent to a rounded teaspoonful) to drop mixture onto the parchment paper.
  • Chill for 3 hours and enjoy!
  • Store in an airtight container and keep on your counter or refrigerate. Enjoy within 3-5 days.

Notes

I cannot stress this enough: after stirring the mixture for 3 minutes on the stove, remove it from the pan immediately and transfer it to a mixing bowl. Failing to do so will result in a dried out, too thick to use base.
Only use evaporated milk (not sweetened, condensed milk) for this recipe. The products are very different and unfortunately one cannot be substituted for the other.
