Instructions
Preheat oven to 400℉.
Arrange tomatoes and garlic in the bottom of a casserole dish.
Pour in olive oil, then sprinkle with salt, pepper, and half of the crushed red pepper flakes.
Place feta cheese block in the center of the dish (make sure tomatoes aren't underneath). Gently flip the cheese block so that all sides are coated with the oil.
Sprinkle remaining red pepper flakes on top.
Bake, uncovered, for 30 minutes.
While the casserole dish is in the oven, boil the noodles to al dente (check box for duration). Immediately drain and rinse under cold water; set aside.
After 30 minutes, increase the oven temperature to 450℉. Bake for 10 more minutes, or until cheese block and tomatoes have slightly browned.
Remove casserole from oven. Stir the feta, tomatoes, and olive oil to create a velvety sauce. Add freshly chopped basil and noodles; stir to coat.
Serve immediately. Garnish with additional basil if desired.
Notes
If your sauce is too thick, add a splash of water to reach your desired consistency.
Make sure your casserole dish isn't too large (I don't recommend any larger than 3 qt.)! You want the tomatoes packed snugly around the feta so their natural juices pool together to create a creamy sauce, rather than drying up and evaporating in a pan that's too big.
Store any leftover pasta in an airtight container in the refrigerator for up to 3 to 4 days.
The baked feta sauce will naturally thicken up quite a bit as it cools in the fridge. When you're ready to eat, simply add a quick splash of water or milk to your bowl and microwave in 30-second intervals. Give it a good stir, and the sauce will become perfectly creamy all over again!
