🍲What to Look For in a Good Crockpot

You don't need a fancy, high-tech crockpot to make a great meal. A simple, reliable model will get the job done just fine. Look for one with at least a 6-quart capacity, so you have plenty of room for soups that serve a crowd or leave you with leftovers. A few helpful features to consider are a removable insert for easy cleanup, a locking lid for transport, and programmable settings so you can set it and forget it without worrying about overcooking.

🍶How to Store Crockpot Soups

Most of these crockpot soups store beautifully in the fridge for up to 4-5 days, making them perfect for meal prep or easy leftovers throughout the week. For longer storage, portion the cooled soup into individual freezer bags, laying them flat to freeze (this saves freezer space and makes for quick, single-serving thawing whenever you need a fast meal). Simply grab a bag, thaw it in the fridge overnight or reheat it straight from frozen on the stovetop, and you've got a homemade meal ready in minutes.

✅Betty's Top Tip For The Best Slow Cooker Soups

Resist the urge to lift the lid and stir while your soup cooks, since every time you do, you let out heat and add extra cooking time. Trust the process, keep the lid on, and let your crockpot do what it does best!

❓Crockpot Soups Common Questions

How do you thicken soup in a crockpot?

Because crockpots trap moisture, soups can sometimes turn out a little thin. One of the easiest solutions is to remove the lid towards the end of cooking time (30 minutes remaining). This allows some of the moisture to evaporate. If you want to thicken the soup further, you can also add a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoon cold water).

Should I cook crockpot soup on HIGH or LOW?

For the absolute best results, cooking your soup on LOW for 6 to 8 hours is usually the way to go. Cooking low and slow allows all those delicious flavors to meld beautifully while keeping any meats perfectly tender. However, if you're short on time, the HIGH setting (about 3 to 4 hours) works just fine for most recipes!

When should you add pasta or dairy to slow cooker soup?

Always add delicate ingredients like pasta, rice, milk, or heavy cream near the very end of the cooking process! Stir cooked pasta in during the last 30-40 minutes so it has time to soak up the broth without becoming mushy. Dairy (brought to room temperature first before adding) should be stirred in during the last 15 minutes. This prevents the heat from curdling or separating it. I like to remove some of the warm broth to mix with certain dairy products (especially cream cheese) before adding.

Do I need to brown meat before adding it to the slow cooker?

While you can absolutely toss raw chicken breasts or thighs directly into a crockpot soup, browning ground beef or sausage beforehand is highly recommended. Searing your meats in a skillet first locks in the flavor, lets you drain off excess grease, and gives your final soup a much richer, deeper taste.

Do I need less liquid when making soup in a slow cooker?

Typically, yes! Because there is very little evaporation in a slow cooker with the lid on, you generally need slightly less broth than you would if you were simmering the soup on the stovetop. A good rule of thumb is to ensure your liquid covers the vegetables and meat by about half an inch.
