Instructions
Wash the stalks and pepper crowns and thoroughly dry. Trim ends off of celery. Cut celery into 3-4 inch sticks. Remove pepper stems from center. Cut pepper crowns in half.
Using a small spoon, fill each celery and pepper cavity with hummus.
Place 4-5 pretzel rounds, evenly spaced, on top of the hummus.
Enjoy immediately, or cover and chill.
Store any leftovers in an airtight container for up to 1 day. Keep refrigerated and remove pretzels before storing.
Notes
Make sure the celery and peppers are completely dry before stuffing them. The hummus sticks better this way.We like different flavors of hummus, but enjoy the roasted red pepper flavor the best with this.Place the pretzels on just before serving so they don't get soggy.
