Equipment

  • 36 3.5-4.5 inch cocktail skewers

Ingredients

  • 2 cups cherry tomatoes I like Sunset brand's One Sweet tomatoes, which are smaller
  • 8 oz fresh mozzarella pearls drained
  • 1 cup pitted Castelvetrano olives drained
  • fresh basil for garnish
  • cup pesto you can make your own or buy jarred

Instructions

  • Stack and arrange mozzarella, tomatoes and olives on skewers; vary the order for aesthetic appeal.
  • Arrange skewers in a circle on serving plate; garnish with basil and place dipping cup with pesto in center.
  • Cover with plastic wrap and keep chilled until ready to serve.

Notes

Store leftovers in an airtight container and refrigerate; enjoy within 3 days.
While it's tempting to place the skewers through the pits in the olives; it's best to pierce the olives on the side. That way, the olives don't fall off the skewers.
