Ingredients

  • 1 cup smooth peanut butter I use Jif
  • 2 sticks (1 c) salted butter I like sweet cream salted butter for fudge recipes
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt I prefer sea salt because it's less granular than table salt
  • 4 cups sifted confectioner's sugar lightly spoon into measuring cup and level after the sugar has been sifted

Instructions

  • Melt the peanut butter and butter in a large microwave safe bowl until smooth; stir.
  • Add vanilla and salt; mix.
  • Pour in sifted confectioner's sugar; mix until thoroughly blended.
  • Spread mixture into prepared pan; spread to edges and smooth the top with a spreading spatula.
  • Cover tightly and refrigerate for 4 hours; slice into 64 squares.

Notes

Lining your pan with foil or parchment paper makes for much easier removal once the fudge is set. Use the paper or foil to lift the fudge out of the pan before slicing.
