Peanut Butter Chocolate Chip Bars will melt in your mouth with their buttery crisp edges and soft and chewy center. Loaded with crunchy Reese's Pieces and gooey chocolate chips, each bite is peanut butter chocolate bliss. These easy to make, decadent and dreamy cookie bars are perfect for get togethers, potlucks, or just because 😉.

Is there anything better than a gooey, moist and chewy cookie bar?

Once you try these peanut butter and chocolate chip bars, I think you will agree with me that there's nothing better. NOTHING!

These wonderfully buttery, sinfully rich bars are a chocolate peanut butter lover's dream. With Reese's Pieces and gooey chocolate chips, each scrumptious bite is pure joy.

But I must warn you: these oh-so-tasty bars are a little dangerous. They are seriously addictive. So soft and satisfying, with melt in your mouth decadence, it's really hard to eat just one (or two)!

This tasty recipe was inspired by my Mini Egg Cookie Bars--a buttery, chocolaty spring time hit, and Peanut Butter Butterscotch Blondies.

👪Why you'll love it

Winning flavor combo- anyone who loves chocolate and peanut butter together will instantly crave these gooey cookie bars, that are loaded with Reese's Pieces and chocolate chips!

Easy recipe- these cookie bars are made from scratch, but they are incredibly easy to whip together and use basic ingredients that you most likely already have on hand.

Great cookie taste without the hassle- when you make cookie bars, the entire batter goes into the pan and bakes as one! No scooping or multiple pans needed!

🥘Ingredients

ingredients
  • butter- the key to creamy, melt in your mouth, cookie bars
  • brown sugar- firmly pack it for best results; you can use light or dark brown
  • eggs- room temperature eggs are best because they mix better with the ingredients
  • pure vanilla extract- this is much richer and more flavorful that imitation vanilla extract
  • all-purpose flour- gently spoon into your measuring cup and then level it with a knife for best results
  • baking powder & salt- leavening agents to make these dense cookie bars rise ever so slightly
  • Reese's Pieces & chocolate chips- you may choose to save a few to press into the top before baking

🔪Instructions

  1. Step 1: Melt the butter, then mix with the brown sugar, eggs, and vanilla.

  1. Step 2: Mix the dry ingredients in a separate bowl; then add to butter mixture bowl. Stir until just combined.

  1. Step 3: Stir in Reese's Pieces and chocolate chips until just combined.

  1. Step 4: Bake in a 13x9 pan for 20-22 minutes. Allow to cool slightly before cutting into squares.

Hint: Stir until JUST COMBINED (it's okay if the batter is a little lumpy). If you over stir, it will become too cake-like.

📖Variations

  • M&M's reverse- Use M&M's and peanut butter chips instead for a candy flavor reversal!
  • With nuts- add ½ crushed walnuts to the batter when you add the candy.

  • 13x9 nonstick metal pan, lined with parchment paper for easy removal
  • large microwaveable mixing bowl

🍶Storage

Store in an airtight container. Enjoy within 3-5 days. No need to refrigerate. Storing with a slice of bread helps to prevent dryness.

You may freeze Peanut Butter Chocolate Chip Bars after they bake and have cooled completely. Store in freezer safe packaging for up to 2 months. Thaw overnight in the fridge and enjoy!

💭Top tip

I generally bake these for 20-22 minutes. Keep in mind that the longer cookie bars bake, the more cake-like they will be. The less they bake, the more they will resemble a blondie (but of course, bake them long enough so that they're not too ooey gooey and are safe to eat). As a general rule of thumb, you want the tops and edges to be golden brown and buttery crisp, with a soft and chewy, dense center.

Always use a metal, non-stick pan for cookie bar recipes.

Ingredients
  

  • 2 sticks butter
  • 1 & ¼ cups brown sugar firmly packed
  • 2 large eggs at room temperature
  • 2 teaspoon pure vanilla extract
  • 2 cups all-purpose flour spoon and level for best results
  • 2 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup Reese's Pieces
  • 1 cup chocolate chips

Instructions
 

  • Preheat oven to 350℉.
  • Melt butter in a large microwaveable mixing bowl; allow to cool slightly.
  • Add the brown sugar; mix well.
  • Add the eggs, one at a time, followed by the vanilla extract. Mix.
  • In a separate medium bowl, mix the flour, baking powder and salt. Add this mixture to the large bowl; stir until just combined.
  • Stir in Reese's Pieces and chocolate chips until just combined.
  • Bake in a preheated 350 degree oven for 20-22 minutes. Let cool 10 minutes before cutting into squares and serving.

Notes

When combining the dry and wet ingredients, stir until JUST COMBINED (it's okay if the batter is a little lumpy). If you over stir, it will become too cake-like.
