Easy Cheesy Guacamole is creamy, tangy and delicious. Served on the side with tortilla chips or as a topping for Mexican dishes and sandwiches, this easy to make appetizer is a taco night and party must have!

Mexican-inspired meals are a staple in our house. We rarely go a week without having one--whether it's Three Layer Cheesy Taco Bake or Chicken Bacon Ranch Quesadillas.
But one thing that was always missing from the table was guacamole, because most of my family has a strong aversion to avocados.
That's right--one of the most popular dips in the world just wasn't get worked into our taco routine. That was, until I decided to be daring and whipped up a batch of traditional guacamole with my secret weapon: shredded Mexican cheese.
The shredded cheese, spices and green chiles won everyone over--especially when they realized cheesy guacamole is just as tasty with tacos as it is with tortilla chips.
Now this cheesy guac, along with South of the Border Salsa, is an automatic staple with many of our Mexican meal favs.

Breakfast ideas: Spread on toast or on top a bagel; top with a fried egg, cheddar cheese and bacon strips for a deluxe version. Guacamole can also be added to omelets.

🍶Storage
Seal with plastic wrap, follow the advice below, store in an airtight container and refrigerate. Enjoy within 1 day.
💭Top tip
To prevent browning, place the guacamole in an airtight container. Choose a container that is a good fit. You don't want a lot of space between the guacamole and the lid, which is an air trap.
Before putting on the lid, cover the guacamole with plastic wrap. Actually have the plastic wrap rest directly on top of the guacamole. Then place another layer of plastic wrap directly under the lid before sealing. Then refrigerate.
🗨️FAQ
Have a combination of creamy (more mixed) and chunky avocado in the guacamole. Also follow the steps above for keeping it fresh and brown-free.
Believe it or not, traditional guac is just avocado, lime juice and salt. This recipe starts with that base and offers more flavor and texture.

I've always had traditional guacamole, but I really liked this recipe because of the green chiles and cheese. That was a great addition, especially on top of a cheddar bacon burger with jalapeno coins!
