Easy Cheesy Guacamole is a super creamy, tangy and delicious dip that will be the talk of your next party--guaranteed. With fresh avocado, green chilis, and shredded cheese, this flavorful guac will have everyone digging into the chips and scraping the bottom of the bowl!

This tasty recipe is super quick to put together (all you need is 10 minutes) and uses a food processor to make life simple.

easy cheesy guacamole

Guacamole is one of those party staples that never goes out of style. You can never go wrong bringing this easy homemade guac (along with South of the Border Salsa) to a tailgate, Cinco de Mayo party, or to the taco night dinner table.

That's because cheesy guacamole is so versatile. It goes well with crunchy chips, is excellent in tortillas and wraps, makes a great sandwich spread, and an awesome baked potato topping.

This recipe version is extra creamy and delicious and always gets raves. Everyone loves the addition of shredded cheese, spices and green chiles, which taste so good with the fresh avocados.

with chips

Plus this is one of those dips you can feel better about serving to the family. The main ingredient is avocados (you know, with the good fat), making that next chip (or two or three) a little less guilt-producing. No judgment here 😁!

🥘Ingredients

ingredients
  • avocados- use freshly ripened ones (slightly soft to the touch) for best taste and flavor
  • shredded Mexican cheese blend- feel free to swap this for cheddar cheese if you prefer
  • mayonnaise- provides a creamy tanginess
  • green chiles- we use these instead of jalapeños to take things up a notch
  • salt & chili powder- seasonings for added spice and flavor
  • lime- for a citrus-y kick and for preservative purposes
  • diced tomatoes -optional, but fun to include a few on top when serving

See recipe card for quantities.

Hint: Use fresh ingredients and avocados that have just ripened for best results.

📖Variations and recipe ideas

Sandwich topper: Guacamole is an excellent, nutritious sandwich spread. Smother some onto your next tortilla wrap, panini, grilled chicken sandwich, taco or burger.

Breakfast ideas: Spread on toast or on top a bagel; top with a fried egg, cheddar cheese and bacon strips for a deluxe version. Guacamole can also be added to omelets.

Baked potato: Dress your next baked potato--Tex-Mex style with sour cream, green onions, crumbled bacon, cheddar cheese, pico de gallo and guacamole. You can also substitute the sour cream entirely with this guacamole recipe.

🍽Equipment

  • plastic wrap
  • avocado kitchen tool (optional)
  • citrus juicer (optional)

🍶Storage

Seal easy cheesy guacamole with plastic wrap, follow the advice below, store in an airtight container and refrigerate. Enjoy within 1 day.

💭Top tip

To prevent browning, place the guacamole in an airtight container. Choose a container that is a good fit. You don't want a lot of space between the guacamole and the lid, which is an air trap.

Before putting on the lid, cover the guacamole with plastic wrap. Actually have the plastic wrap rest directly on top of the guacamole. Then place another layer of plastic wrap directly under the lid before sealing. Then refrigerate.

🗨️FAQ

What is the trick to good guacamole?

Have a combination of creamy (more mixed) and chunky avocado in the guacamole. Also follow the steps above for keeping it fresh and brown-free.

What is traditional guacamole made of?

Believe it or not, traditional guac is just avocado, lime juice and salt. This recipe starts with that base and offers more flavor and texture.

Notes

This recipe yields about 2 cups of guacamole.  I typically make the full recipe for entertaining and half the recipe when serving with a family meal.
Avoid using underripe or overripe avocados. Try to choose avocados that are slightly soft to the touch from the outside.
Remember that oxygen and cut avocados don't get along. Take precautions to not have your cut avocados "exposed" for too long before making the guacamole. See the above post for further suggestions!

I've always had traditional guacamole, but I really liked this recipe because of the green chiles and cheese. That was a great addition, especially on top of a cheddar bacon burger with jalapeno coins!

Absolutely! It's one of the reasons why I love to make it. It's great as a dip, but is also wonderful in sandwiches.
