This tasty recipe is super quick to put together (all you need is 10 minutes) and uses a food processor to make life simple.

Guacamole is one of those party staples that never goes out of style. You can never go wrong bringing this easy homemade guac (along with South of the Border Salsa) to a tailgate, Cinco de Mayo party, or to the taco night dinner table.
That's because cheesy guacamole is so versatile. It goes well with crunchy chips, is excellent in tortillas and wraps, makes a great sandwich spread, and an awesome baked potato topping.
This recipe version is extra creamy and delicious and always gets raves. Everyone loves the addition of shredded cheese, spices and green chiles, which taste so good with the fresh avocados.

Plus this is one of those dips you can feel better about serving to the family. The main ingredient is avocados (you know, with the good fat), making that next chip (or two or three) a little less guilt-producing. No judgment here 😁!

- avocados- use freshly ripened ones (slightly soft to the touch) for best taste and flavor

- Step 1: Prep avocados; place in processor or blender.

- Step 2: Add the cheese, mayo, green chilis, seasonings and lime juice; pulse until smooth.
Hint: Use fresh ingredients and avocados that have just ripened for best results.

Sandwich topper: Guacamole is an excellent, nutritious sandwich spread. Smother some onto your next tortilla wrap, panini, grilled chicken sandwich, taco or burger.

🍶Storage
Seal easy cheesy guacamole with plastic wrap, follow the advice below, store in an airtight container and refrigerate. Enjoy within 1 day.
💭Top tip
To prevent browning, place the guacamole in an airtight container. Choose a container that is a good fit. You don't want a lot of space between the guacamole and the lid, which is an air trap.
Before putting on the lid, cover the guacamole with plastic wrap. Actually have the plastic wrap rest directly on top of the guacamole. Then place another layer of plastic wrap directly under the lid before sealing. Then refrigerate.

Have a combination of creamy (more mixed) and chunky avocado in the guacamole. Also follow the steps above for keeping it fresh and brown-free.
Believe it or not, traditional guac is just avocado, lime juice and salt. This recipe starts with that base and offers more flavor and texture.

Ingredients
- 4 medium avocados pitted and halved
- 1 cup shredded Mexican cheese blend I typically use Sargento's or Kraft
- 2 tablespoons mayonnaise I use Hellmann's or Duke's Light
- 1-2 tablespoons finely chopped canned green chiles choose your level of spiciness
- 1 teaspoon salt
- 1 teaspoon chili powder
- Juice from one small lime used as a preserverative to help prevent browning
- Rotel or diced tomatoes optional, but fun to include a few on top when serving
Instructions
- Pit and halve avocados; scoop out the flesh and place in your food processor or blender. Add all other ingredients EXCEPT Rotel/tomatoes.
- Blend until smooth.
Serving:
- If serving right away, place in a serving bowl.
- If serving later, cover directly with plastic wrap, store in an airtight container and refrigerate for up to 1 day.
