Mediterranean Stuffed Peppers are a healthy appetizer or snack that's quick and easy to prepare. Filled with hummus, and topped with crumbled feta cheese, olives, and chives, each crunchy, savory bite of these sweet mini peppers will have everyone reaching for more!

When you're looking for a quick, healthy bite, it's hard to think of an option more satisfying than a sweet mini pepper. Crunchy and colorful, these tasty little peppers are mildly sweet and fun to eat.

One of our favorite ways to enjoy mini peppers is stuffing them with savory ingredients. This flavorful Mediterranean inspired recipe is at the top of my list because it's incredibly easy and tastes fresh and delicious.

For convenience, use store bought hummus, or try homemade (you can't go wrong with my Best Homemade Hummus and Roasted Red Pepper Hummus). Fill the pepper cavities, then top with crumbled feta, sliced olives, and chives for fantastic flavor.

This easy and simple stuffed peppers recipe is great for entertaining and also makes a nutritious snack. It can be made vegan friendly by using dairy free feta cheese.

👪Why you'll love it

Super easy recipe- Stuffed mini peppers make a great, quick snack, but they're also the perfect choice for a last minute game day or party appetizer. They can be served immediately after being made, but also keep well in the fridge, giving you the flexibility to make them ahead of time if you wish.

Only 5 ingredients and no oven needed- It doesn't get much simpler when you want to whip up a delicious, fun to eat, bite!

Kid approved- Kids not only enjoy eating these (especially without the olives😄), they also enjoy helping to assemble them!

🥘Ingredients

  • Sweet mini peppers- these peppers are mild and crunchy and are typically sold in pre-packaged bags (you can also use mini bell peppers for this recipe); try to get a pack that has a variety of colors and sizes that aren't too narrow or small
  • hummus- use my homemade plain hummus, roasted red pepper hummus, or your favorite brand/flavor
  • crumbled feta cheese- provides a tangy, savory bite; omit if preparing for a vegetarian or vegan plate (or use vegan feta, which doesn't contain animal rennet)
  • sliced black olives- a few are placed on top of each pepper; I'll often omit these when preparing the recipe for kids
  • diced fresh chives- provide a color pop and a mild onion crunch (not pictured above)

  1. Step 1: Rinse the mini peppers; halve and scoop out the membranes and seeds.

  1. Step 2: Fill each pepper cavity with hummus.

Hint: I like to keep the pepper stems on for aesthetic appeal. I also think it sometimes makes them easier to pick up!

🥣Substitutions

  • Peppers: You can use baby bell peppers instead of sweet mini peppers.
  • Vegan - use dairy free feta cheese or simply omit the cheese and replace with a few chickpeas (toasted or untoasted) instead

  • small melon scoop (optional, but handy for scooping out the pepper membranes and seeds)
  • small spoon

🍶Storage

Store in an airtight container and keep refrigerated. Enjoy Mediterranean stuffed mini peppers within 2-3 days.

Freezing isn't recommended.

💭Top tip

A small melon scoop comes in handy for removing the membranes and seeds. I like to place the peppers under running water after I do this to flush them out to make sure there's no seeds remaining. Then I just pat them dry with a paper towel before filling.

What goes well with mini stuffed peppers?

They can be enjoyed as a snack or appetizer. Serve them next to a veggie tray. We sometimes enjoy them as a side when grilling chicken or pork.

Are mini peppers just small bell peppers?

They are a different variety and actually have less seeds. Mini peppers are sweeter and typically longer and thinner, though their sizes do vary. Baby bell peppers work in this recipe too though, so feel free to use them!

Ingredients
  

  • 12 oz bag mini peppers rinsed, halved, seeded, and sliced in half lengthwise
  • 1 cup hummus we like roasted red pepper; *see below for homemade version
  • ½ cup crumbled feta cheese use dairy free if preparing for a vegan plate
  • ¼ cup sliced black olives
  • 3 tablespoon fresh chives diced
