It's hard to think of a salty crisp, oven baked treat more satisfying than seasoned roasted potatoes.
Not only are they easy to whip together, roasted potatoes pair well with a variety of grilled foods and sandwiches (we love them with Slow Cooker Mississippi Chicken sandwiches topped with homemade Dill Pickles).
In this recipe, the skins are left on for extra crispness, vitamins, and flavor. With just 6 ingredients, homemade oven roasted potatoes are not only so much more economical, they're way better for you than any frozen or pub-style french fry.

You can choose to use a wavy cutter to make the potatoes look extra fancy, or simply slice them with a knife. After seasoning and baking, the end result will be the same: a warm pan full of perfectly crisp, seasoned potatoes that are good down to the last salty crumb.

- yellow potatoes- sometimes called Yukon gold, these are my absolute favorite because of their buttery flavor and thin, edible skins--they're also lower in starch than Russet and red
- olive oil- only a little is needed to coat the potatoes so they crisp to perfection
- garlic powder, onion powder, sea salt, & smoked paprika- our favorite combo of seasonings for roasted potatoes

🔪Instructions

- Step 1: Wash and scrub potatoes; slice into rounds with ¼ inch thickness.

- Step 2: Transfer potatoes to mixing bowl; drizzle with olive oil and mix.

- Step 3: Mix seasonings together, sprinkle on top of potatoes; stir.

- Step 4: Place on prepared pan and bake for 40-45 minutes, flipping about halfway through. Serve warm.
Hint: For best results, take time to make sure potatoes aren't overlapping each other on the pan.
🥣Substitutions
- Potatoes - use red, Russet, fingerlings, or sweet potatoes instead for a different flavor and texture
- Olive oil - use olive oil spray instead of bottled oil for a lighter approach
📖Variations
- Spicy - dial up the heat by adding ¼ teaspoon or more of cayenne pepper to the mix; for even more heat, add a dash of hot sauce before serving
- Deluxe - during the last 5 minutes of baking time, sprinkle on a thin layer of your favorite shredded cheese (we like cheddar); after baking, sprinkle with chives or green onions and real bacon crumbles

🍶Storage
Once cool, store Seasoned Oven Roasted Potatoes in an airtight container. Refrigerate and enjoy within 5 days.
To reheat, place potatoes on greased cookie sheet and bake in an oven or toaster oven at 375 degrees for 15 minutes, flipping halfway through. Do not microwave leftovers or the potatoes will get soggy.
This recipe hasn't been tested for freezing.
💭Top tip
Choose fresh potatoes for best flavor. If your potatoes have long sprouts, smell more bitter than earthy, or have green rims around the skin, they are spoiled and should be discarded. Always store potatoes in a cool, dark and dry place, such as a cellar or basement, and NOT in the refrigerator.

Garlic powder, onion powder, paprika, chili powder, salt, and pepper are always good choices. You may choose a combination of seasonings, or stick with your favorite + salt.
Sour cream, Creamy Dijon Sauce, or feta dressing, along with chives and dill are a few of our favorites.
I choose olive oil for a healthier option; when the potatoes roast at a high enough heat (like in this recipe), the oil doesn't smoke.
