These Valentine cookie bars are everything a holiday treat should be: soft, chewy, and loaded with festive pink and red M&Ms. They have that perfect buttery, crisp edge but stay thick and fudgy in the middle—it’s essentially a giant chocolate chip cookie dressed up for date night!

If you’re a fan of gooey chocolate chip cookies and festive holiday treats, these easy Valentine cookie bars are about to become your new favorite. They take everything you love about a classic cookie and bake it into thick, shareable bars that are much easier than scooping out individual rounds.
Trust me when I say these buttery, dense, and chewy bars are seriously addictive—right up there with my Peanut Butter Chocolate Chip Bars and Homemade Fudgy Brownies. With their soft centers and melt-in-your-mouth decadence, it’s nearly impossible to stop at just one (or two!).

Decorating Valentine cookie bars is a fun, kid-friendly activity because there’s no right or wrong way to do it. Since these bars provide a nice, flat canvas, kids can have a blast pressing in festive red and pink M&Ms or scattering a handful of heart-shaped sprinkles over the top before they hit the oven.
For the ultimate dessert, serve these scrumptious cookie bars warm from the oven with a generous scoop of vanilla ice cream and a drizzle of chocolate sauce. It's a simple yet decadent way to totally rock your next Valentine’s Day gathering!

🥘Ingredients

- butter- the key to creamy, melt in your mouth, cookie bars
- brown sugar- firmly pack it for best results; I use light brown for a great flavor, but you can use dark brown
- eggs- room temperature eggs are best because they mix better with the ingredients
- pure vanilla extract- this is much richer and more flavorful that imitation vanilla extract
- all-purpose flour- rather than pouring or scooping, gently spoon the flour into your measuring cup and then level it with a knife for best results
- baking powder & salt- leavening agents to make the dense cookie bars rise ever so slightly
- semi-sweet chocolate chips- these provide the perfect balance of rich chocolate flavor and melty pockets of sweetness in every bite
- Valentine-themed decorative add-ons- I like using mini M&Ms, heart sprinkles, and pink decorating icing
See recipe card for quantities.
🔪Instructions

- Step 1: Melt the butter, then mix with the brown sugar, eggs, and vanilla.

- Step 2: Mix the dry ingredients in a separate bowl; then add to butter mixture bowl. Stir until just combined.

- Step 3: Stir in chocolate chips; spread mixture into prepared pan. Press M&Ms on top; bake.

- Step 4: Allow baked cookie bar to cool in pan 15-20 minutes; then remove and allow to fully cool on wire rack before slicing and decorating.
Hint: For the best texture, be careful not to overmix the batter. Stir the wet and dry ingredients together until they are just combined. Overmixing can lead to a tougher, more cake-like consistency, but a light hand ensures your Valentine cookie bars stay perfectly dense, soft, and chewy.
📖Variations
- White Chocolate & Raspberry - swap the semi-sweet chocolate chips for white chocolate chips and gently fold in some freeze-dried raspberries
- Double Chocolate Valentine Bars - reduce flour by ¼ cup and add ¼ cup of cocoa powder to the dry ingredients for a rich chocolate base; top these with pink frosting and red M&Ms for a striking contrast that kids will enjoy decorating
- The "Everything" Holiday Bar - mix in a combination of chocolate chips, pretzel pieces, and festive sprinkles; this creates a sweet-and-salty treat

🍶Storage
Store Valentine Cookie Bars in an airtight container. Enjoy within 3-5 days. No need to refrigerate. Storing with a slice of bread helps to prevent dryness.
You can also freeze the cookie bars after they bake and have cooled completely. Store in freezer safe packaging for up to 2 months. Thaw overnight in the fridge and enjoy!
💭Top tip
I generally bake these for 20-22 minutes. Keep in mind that the longer cookie bars bake, the more cake-like they will be. The less they bake, the more they will resemble a blondie (but of course, bake them long enough so that they're not too ooey gooey and are safe to eat). As a general rule of thumb, you want the tops and edges to be golden brown and buttery crisp, with a soft and chewy, dense center.
Always use a metal, non-stick pan for cookie bar recipes. to a minimum internal temperature, but they should still be juicy for best results.
🗨️FAQ
Let the bars cool completely to room temperature (or even overnight) before cutting. Using a parchment paper "sling" to lift them out of the pan and a long, sharp knife dipped in warm water can also help create cleaner edges.
Yes. For a chewy texture, the center should still be slightly soft and may even jiggle slightly when removed from the oven. They will continue to firm up as they cool.
You can mix some into the dough, but for the best "Valentine" look, press the remaining candies into the top of the dough before baking.
